1 cup uncooked Quinoa
2 cups water
2 cups cubed peeled mango (not too ripe-needs to be firm)
1/2 cup sliced and diced green onions or purple (red)
1/4 cup chopped Cilantro
1/4 cup extra virgin olive oil - cold or expeller pressed
1/2 lime - juiced (or 1 lime)
1/2 teaspoon ground red pepper
salt and pepper to taste
Place quinoa in a fine-mesh strainer; rinse well. Transfer to medium saucepan and add water.
Bring to a boil. Reduce heat; simmer, covered, 10-12 minutes or until all the water is absorbed.
Stir; let stand, covered, 15 minutes. Transfer to a large bowl; cover and refrigerate for at least an hour.
Add the mango, cilantro and onions and mix well. Combine the oil, lime juice and spices; whisk and pour over the quinoa mixture; mix until the whole
thing is well blended.
You can eat it now or refrigerate for another hour or so to allow the flavors to marry.
Note: Quinoa is an ancient grain used by the Incas. It contains 8 essential Amino Acids, therefore, it is considered a complete protein.
This is a good refreshing salad. If you can't get fresh mango you can try frozen.
